The structure of concerts in this series introducing Europe's key musical regions is based on clear culinary associations. Yet, in reality, the make-up of these performances closely follows the traditions of classical concert programmes, just as the courses appearing on a menu are rooted in convention. The hors d'oeuvre or starter is represented by an overture, while the dessert is a lighter, more popular piece. In between, the musical main course is provided by a more substantial cyclical work..., which the musical presenter introduces in the first part of the concert and is performed in full after the interval. French music – just like French cuisine – is famed for its unrivalled refinement, the perfect harmony of flavours and a meticulous attention to detail. Those attending this concert can expect to hear music fit for a gourmet as created by the finest musical chefs. Hector Berlioz put all his knowledge on structuring the sound from various instruments in a book entitled Treatise on Instrumentation. The Roman Carnival Overture can be taken as an illustration to this musical textbook as it is in this work that Berlioz puts his theoretical knowledge into practice. Another true master of the complexity of sound is Maurice Ravel, whose Bolero places instrumentation above all aspects of the music, using increasingly mature orchestral harmony to intensify the repeating melody as we progress through the piece. Claude Debussy also stirs up unusual colour in his Iberia, conjuring up the Spanish countryside and the daily routines and celebrations of the locals with great sensitivity and vibrancy.
